- Clean without washing endive (remove damaged leaves) and hollow out their base.
- In a casserole dish, put 30 g of butter, lemon juice, 50 cl of water and the endives. Cover and bring to a boil over high heat then cook for 30 minutes over medium heat. drain the endives and let them cool.
- Meanwhile, reduce the béchamel for 5 minutes over low heat then add the Comté cheese, the rest of the butter, salt and pepper. Mix well.
- Roll them endive in the slices of ham and carefully arrange them vertically in the terrine.
- Pour the hot béchamel into the terrine up to 2 cm from the edge.
- Close your jarendives with ham and immediately proceed to heat treatment for 40 minutes at 100°C for long-term storage.
