1. To start preparing the chutney, place the chopped green and red tomatoes and all the other ingredients except the sugar in a large saucepan.
2. Bring to the boil and cook gently over a low heat for about 20 minutes, or until the vegetables are soft.
3. Add the sugar and combine the ingredients. Continue cooking over a low heat, stirring occasionally, for around 1 hour until the green and red tomato chutney has a "pulpy" consistency.
4. Immediately fill the jars to within 2 cm of the rim, close and heat for 45 minutes at 100°C. Label and store in a dark place for 2 weeks.
A traditional chutney allows you to use the last unripe tomatoes. Ideal as an accompaniment to meat, for grills, roast pork and barbecues.
