Recipe Tomato pulp with basil and garlic

  • 1 kilo of ripe tomatoes
  • 2 onions
  • Olive oil
  • 1 fresh garlic (10 cloves of garlic)
  • Salt / Sugar
  • 1 bunch of basil
  • Pepper

1. Boil the tomatoes for a few moments so that you can peel them more easily. Then cut them into small cubes.

2. Peel and chop the onions, put oil in a pan then add the onions. While the onions are cooking, peel and slice the fresh garlic (keeping the stem which will be reused later).

3. When the onions have sweated well, add the garlic to the pan. Add the tomatoes when the garlic has started to cook then add 2 large pinches of salt and sugar, and the stalk of fresh garlic.

4. Roughly chop the basil.

5. When the tomato is cooked, remove the garlic stalk, add the basil and mix. Pepper at the end of cooking.

6. Immediately fill the Le Parfait Familia Wiss terrines to within 2cm of the edge. Close and immediately heat treat for 1 hour at 100°C.
