1.3 kg carrots

1 kg granulated sugar

1 small stick of cinnamon

Juice of 1 lemon (50ml)

  1. Peel and cut the carrots into thin slices.
  2. Put them in a cooking container with ½ liter of water and bring to a boil. Stir occasionally until there is no more water. Carrots should be soft.
  3. Add sugar, cinnamon stick and lemon juice. Bring to a boil, stirring for about 15 minutes. Do the cold plate test: a little jam on a cold plate that one leans must flow gently.
  4. Skim and remove the cinnamon stick and proceed immediately to put into jam jars. Close and put the jam jars upside down 1 min, and then turn them back over to let them cool.

    Do not forget to stick a jam label on each of the jam jars!
