Violet is not only pretty to look at: its delicate floral scent transforms a toast into stroll in spring. With this version for 6 pots, you can spread happiness : a pot for you, one to offer, and the others to shine on the neighborhood tables.
The secret? Let the flowers infuse gently with the sugar, as if they were telling their secrets to your breakfast...
- Remove the stems from your flowers, wash them in cold water and dry them gently on a clean cloth.
- Mix the flowers, sugar and lemon juice in your saucepan and let disgorge between 1 and 2 hours. You can add a vanilla pod or a few drops of orange blossom.
- Add water, bring to a boil over medium heat, then simmer gently 15 to 20 minutes stirring regularly.
- Do the test from the plate, if the jam is not thick enough, extend cooking of 5 minutes.
- Pour the jam into your jars, wait 2 minutes then return them.
After 5 minutes, you can turn them upside down or let them cool upside down. Keep in a cool, dark place, then in the refrigerator after opening.
