- Choose very ripe, firm and healthy plums. Rinse them, dry them carefully, then prick them with a large needle so that they soak up better.
- In a bowl, bring 50 cl of water to a boil with 250 g of sugar. Boil for 2 minutes to get a light syrup. Quickly plunge the plum into the hot syrup to coat them, then remove them using a skimmer.
- Place them in clean containers. Leave to cool, then completely cover the fruits with brandy with 45 °.
- Close tightly. If necessary, adjust the level of alcohol in the following days, because the plums naturally absorb it.
- Store in a dry, fresh place and out of light. Wait at least two months before tasting.
