- Wash and peel the vegetables. Coarsely cut them into cubes and crush the garlic.
- In a fairly high saucepan, heat 1 tablespoon of olive oil.
- Sweat the vegetables for 5 minutes, mixing regularly.
- After these 5 minutes, add 1 liter of water, salt and pepper.
- Cook covered for 25 minutes.
- Add 1 teaspoon of ground cumin, then mix the preparation until you get a smooth consistency.
- Fill the bottles up to about 3 cm from the edge and immediately proceed to the heat treatment: 1 hour at 100 ° C.
