Everyone knows Halloween pumpkin, but the other vegetables in this wide and varied family are far too often forgotten. Of all sizes and all forms, they are difficult to recognize and choose. So here are our tips for fully taking advantage of these winter delights.

 

Seasonal product available on the markets from fall, the squash, thanks to its variety, offers many possibilities!

But for that, here is a quick summary of the characteristics of all these vegetables.

 

The pumpkin

It’s the best known. There are nevertheless many kinds. The most common has green skin and the shape of a pumpkin. Its flesh is thick, bright orange and very sweet.

 

The blue pumpkin of Hungary

Originally from Budapest, this blue and round vegetable weighs approximately 2 to 4 kg. Its flesh is orange, dense and sweet yellow. Perfect for all your sweet or savory preparations!

 

Potimarron

Of all the sizes up to about 4 kg, it looks like a large orange fig. Its skin is edible and its dark yellow flesh. To taste, it strongly recalls the chestnut.

 

Butternut squash

With its round base, this long squash oscillates between light green and ocher. Its orange and tender yellow flesh with a pleasant hazelnut taste.

 

Spaghetti squash

Yellow and oval, it weighs approximately 4 kg. Despite its fairly bland flesh, it is very original because it naturally forms spaghetti.

 

The Musk squash of Provence

This big pumpkin with striated orange skin can weigh up to 50 kg! Its bright orange flesh is quite firm and thick with a musk flavor and slightly sweet

 

The Berry Succine

With its large pear shape, it can reach 3 kg. Its very tender and sweet light orange flesh will be perfect in velvety.

 

Nice long squash

Green or orange with a round base that extends, it can measure up to 1 m and weigh 3 to 10 kg. Its flesh is clear and sweet orange.

 

The jasper melonnet of Vendée

It has the shape of a melon, all round and light orange. The larger ones can weigh up to 3 kg. Its flesh is orange and very sweet.

 

The Patidou squash

Its skin is white and green, its shape rather round and irregular. It weighs between 200 and 600 g. Its flesh is orange, fine and sweet with a little hazelnut taste.

 

The famous Jack’o Lantern

This squash that Americans transform into Halloween lampion is oval, bright orange and its light and thick orange flesh. It is perfect for soups and jams.

 

The zucchini

We forget it too often, but the zucchini is also part of this rich family. Small feature: it is a summer vegetable containing much less sugar than the others.
