- Wash and peel the peaches, then dice finely. Peel and finely chop the onions.
- Place the peaches, onions, honey, cider vinegar, ground ginger, cinnamon stick, cloves, lemon zest and a glass of water in a saucepan. Bring to the boil and keep at a gentle simmer, stirring regularly, for 30 minutes.
- Remove the cinnamon stick and place in jars, then immediately heat for 30 minutes at 100°C.
