Recipe Melon and honey jam

- Cut the melon into cubes, weigh 500g then macerate it in sugar for 3 hours. Collect the juice and heat it in a stewpot.
- Add the split vanilla pod, honey and orange juice. Bring to a boil over low-medium heat, stirring for 10 minutes. Then add the diced melon and cook for 20 minutes, stirring regularly.
- Check the cooking by pouring a few drops onto a cold plate then tilting the plate. The jam should flow slowly. Remove the vanilla pod. skim regularly to remove the foam that forms on the surface.
- Proceed without delay to place them in jars, close them and turn them over for 1 minute, then put them back upright to let them cool.
