- Select leek whites of the same size, peel, cut to length and wash thoroughly under running water.
- Make a cross-shaped incision at the end and blanch the leeks for 5 minutes in boiling water.
- Cool in cold water and store in Le Parfait Super jars.
- Cover with boiling brine salted at 20 grams per liter up to 2 cm from the rim, close and immediately proceed to heat treatment at 100°C, for 1h30 for 1L jars, 1h15 for 1/2L jars. Your canned leeks are ready.
