Recipe Christmas jam

For the Christmas meal, this year you have a crazy desire to be daring. And if, as an accompaniment to foie gras, you dared to try some little delights made by yourself, such as this succulent fruit jam: oranges, apples, dried fruits... even Santa Claus will ask for more!

  • 1 lemon
  • 2 oranges
  • 500 g apples
  • 1 kg ripe pears
  • 100 g pitted prunes
  • 100 g dates
  • 200 g dried figs
  • 200 g dried apricots
  • 100 g raisins
  • 150 g walnut kernels
  • 150 g almonds
  • 1 pinch of cinnamon
  • 1 kg brown sugar

  • First, take the time to scrub the lemon and oranges under running water. Grate their zest and squeeze their juice, then set aside.
  • Wash the apples and pears without peeling them, then cut them into small cubes. Place them in a large saucepan, add 2 glasses of water and cook covered for around thirty minutes.
  • When the fruits are well cooked, remove them from the heat and pass them through a sieve to collect the juice. Cooked fruit can be used as a compote for a filling or a pie.
  • In a jam bowl, mix the ingredients: juice, zest, dried fruits (except nuts and almonds) cut into small pieces, add cinnamon and brown sugar then bring to the boil and cook for 10 minutes at a low simmer without stopping to mix.
  • Add the walnuts and crushed almonds to this Christmas recipe and continue cooking for 10 minutes.
  • Check the cooking of this fruit jam by carrying out the cold plate test, immediately put it in jars, close them and turn them over for 1 minute, then put them back upright to let them cool.
