Recipe Carrot, orange & ginger kvass

Originally from Eastern Europe, this is a fermented, fizzy, slightly alcoholic drink.

Ingredients

Number of persons: Plusieurs
  • 800g carrots
  • 1 orange
  • 1 tbsp grated ginger 
  • 5g salt
  • 50ml whey
  • 2 tablespoons sugar
  • Unchlorinated water

Preparation

 

1. Peel and slice the carrots.
2. Add the orange juice, a strip of zest, ginger, salt and whey to your Swing Top Le Parfait lemonade maker.
3. Add water up to 3 cm below the opening.
4. Close with a cloth and rubber band, then leave to ferment at room temperature, stirring daily until fine bubbles appear.
5. Filter the drink, leaving 1/4 liter in the bottle, put the vegetables back in and refill with water for a second batch.
6. You can consume your kvass straight away, or leave it to ferment for a further 1-2 days with a pinch of sugar.

 

May contain alcohol, consume in moderation.
