- Wash the potatoes, leaving the skin on. Cut them into thick slices.
- Cut the herring fillets into pieces and the gherkins into slices, peel and cut the onions into pieces.
- Place the herrings, gherkins, onions, potatoes in the jar up to 2 cm from the rim, press down well, then cover with olive oil.
- Close and proceed immediately with heat treatment, 1 hour at 100°C.
