Recipe Moroccan carrot pickles

Les carottes au goût d'orient, c'est succulent ! Et avec cette méthode de conservation : la fermentation, elles gardent longtemps leur qualité nutritive tout en se chargeant de probiotiques bénéfiques pour votre santé. Finalement, c'est simple et bon de se faire du bien.

Ingredients

300 g de carottes

1 échalote rose

1 cuillère à café de chaque épice : poivre noir en grains, graines de moutarde jaune et noire, graines de coriandre

60 cl d’eau non chlorée

18 g de sel

Preparation

  2. Prepare the brine by mixing 60 cl of non -chlorinated water and 18 g of gray sea coarse salt, until the salt is dissolved. (Or 3% salt compared to water)
  3. Cut the carrots into sticks. Peel and mince the shallot.
  4. Fill the jar, intercade the spices. Cover with brine.
  5. Keep at room temperature for 1 week to start fermentation. Then store ideally around 15 ° C. To consume from 2 weeks.

NB: If your water is chlorinated, it must be let it stand in an open carafe for 1 hour or 2 to evaporate the chlorine.
