  • 500 g de cassis égrappé
  • 500 g de myrtilles
  • 1,2 kg de sucre gélifiant ou 1,5 kg de sucre cristallisé

Preparation

  1. Put the blackberries and the blackcurrant in a Dutch oven. Bring to ebullition over high heat. Stir with a wooden spoon by crushing the fruits. Boil 5 min: the fruits burst and make their juice.
  2. Then pour this blackcurrant juice and shade into a sieve above a container and let flow without squeezing.
  3. Weigh the juice obtained and add its weight of sugar. Pour into a bassine with bonds with blueberries and 500g of sugar.
  4. Bring this black blackberry, blackcurrant and blueberry jam. From this moment, count the cooking time: 7 minutes with a giant sugar, otherwise 15 to 20 minutes.
  5. Maintain a high fire and stir often. Make the jam test: Check the cooking by pouring a few drops on a cold plate then lean the plate. The jam must flow slowly.
  6. Split this craft jam then proceed without delay to put it into pots, close and put the pots on the way for 1 minutes, then put them back to the right to let them cool.
