- Cut the ginger into small pieces or thin strips. If it is organic, you can leave the skin. Take the equivalent of a well -rounded tablespoon.
- Fill a clean jar with 1/2 liter of unclosed water.
- Add 1 tablespoon of cut ginger and 1 tablespoon of cane sugar.
- Close the jar without making it airtight and place it near a heat source (radiator, fireplace ...). Plan a container below in the event of an overflow.
- After about 24 hours, small bubbles should start to appear: fermentation is on the way.
- Each day, for 2 to 3 days, add 1 tablespoon of ginger + 1 tablespoon of cane sugar. The drink becomes slightly troubled: this is completely normal.
- You can taste your fermented lemonade as soon as it seems rather sparkling, or keep it in the refrigerator to stop fermentation.
Conservation tip : If you keep it in the fridge, think of "restoring it" by adding 1 tablespoon of ginger and 1 tablespoon of sugar every 15 days.
