- Wash the courgettes, peel and dice them. Then wash and dice the aubergines. Wash and slice the tomatoes.
- Chop 30g of onions.
- Heat 60 cl of water in a saucepan. When it boils, add the courgettes, aubergines, tomatoes and onions.
- Cover and cook for around 10 mins over a medium heat, stirring occasionally.
- Pour the semolina over the vegetables, adding a little water if necessary, and cook for a further 10 mins.
- Blend the mixture in a blender.
- Immediately fill the Le Parfait Super 125 terrines to within 2 cm of the rim, then heat for 75 min at 100°C.
