Recipe Pineapple Chutney

There is pineapple juice and also its chutney which smells of exoticism! Ideal to accompany a chicken curry, it can also be used with any type of meat for a change from everyday life.

Ingredients

Number of persons: 4 servings
  • 1 pineapple
  • 200 g onions
  • 2 dl cider vinegar
  • 1 lime
  • 100 g brown sugar
  • 30 g fresh ginger
  • 1 small chili pepper
  • 1 teaspoon coriander seeds
  • 2 cloves

Preparation

  • Peel the pineapple and cut it into 1 cm thick slices then into small fans. Peel and slice the onions, peel and cut the ginger into thin sticks, take a small ribbon of lemon zest and cut the chilli into small slices. Squeeze the lemon.
  • Pour the vinegar into a saucepan, add the brown sugar, onions, spices, lemon zest and juice. Bring to the boil then add the pineapple fans and cook for 30 minutes over moderate heat, turning from time to time.
  • Immediately fill your Le Parfait jars to within 2cm of the rim and proceed immediately to the heat treatment for 60 mins at 100°C.


Tip: ideal to accompany chicken curry!
