Recipe Mackerel rillettes

- Make a fish stock with the white wine and mackerel (heads removed and gutted) for 30 min. Leave to cool then drain. Then carefully remove the bones and flake the flesh.
- In a bowl, mix the cream and mustard, stir in the capers and gherkins after having blended them. Add the salt and pepper and mix the mackerel flake preparation.
- Once evenly mixed, fill the jars with this white wine mackerel recipe up to 2cm from the rim. Carry out heat treatment for 60 minutes at 100°C.
NB: you can also choose not to put everything in jars to taste this mackerel recipe fresh with a dash of lemon. It’s delicious!
