Recipe Duck Foie Gras with fleur de sel

- Prepare the foie gras. Using a sharp knife, remove the veins, clots and greenish parts of the liver.
- Mix the fleur de sel, pepper and a pinch of powdered sugar.
- Massage the liver with this mixture then place it in the terrines, pressing gently to remove the air up to 2 centimeters from the edge.
- Close and immediately proceed to heat treatment, 45 minutes at 100°C.
