What better treatment of food than subjecting it to heat? A French inventor, at the end of the 18th century, had already understood everything about sterilization time!
Do you know Nicolas Appert? It was he who discovered the principle of preserving perishable foods by subjecting them to heat. How ? By heat treatment. Thanks to this French inventor who left his name to canning, you will be able to enjoy your homemade canned recipes.
Yes, thermal treatment, or heat treatment, allows you to preserve food in jars, and thus keep your products for the long term. The heat treatment time (sterilization or pasteurization) must be adapted according to the recipe: there is no standard treatment time!
Please note that you can sterilize with pressure cookers: pressure cooker, pressure cooker, etc. and pasteurize with a sterilizer (or any other non-pressure device for which you can measure the temperature).
So buy an airtight container (jars, terrines), and easily make the best Le Parfait recipes.
