Recipe Preserved Peas

Rich in protein, peas and their bright green color are one of loustics' favorite fresh products. The children's meal will therefore definitely be a success with this pea recipe.

  • Boiling salt water (20g of salt per litre of water)

  1. Use only peas which have just been picked, even if they have been picked the day before preserving, this can affect the taste.
  2. Shall the peas and blanch them in boiling water for 3-5 minutes, then rinse immediately in cold water.
  3. Place them into Le Parfait jars and cover with boiling salt water, so that the jars is filled up to 2cm from the top. If you wish you can add a couple of teaspoons of sugar to taste.
  4. Close and immediately begin the heat treatment for 1 hour 15 minutes at 100˚C.
