Recipe Pineapple jam

1. For this pineapple recipe, choose a very ripe pineapple, peel it, remove the woody part in the centre and cut it into 1 cm cubes.
2. Weigh out 1.2 kg of pineapple flesh. Place the pineapple, lemon juice and sugar in the jam pan, stir and bring to the boil.
3. From this point, count the cooking time: 7 minutes with a sugar jelly, otherwise 15 to 20 minutes.
4. Check that it is cooked by pouring a few drops onto a cold plate and then tilting the plate: the pineapple jam should run down gently.
5. Skim off the excess and proceed immediately to put your homemade pineapple jam into jars. Turn the jars upside down for 1 minute, then place them upright to cool.
Tip: at the end of cooking, you can add a vanilla pod cut into 5 or 6 pieces (as many as there are jars).
