Recipe Old boy jam

This is a jam in name only, as the old boy will tell you. Best served in a glass rather than on toast, it's full of good seasonal fruit, but should be eaten in moderation.

Ingredients

Number of persons: Several
  • 1 kg seasonal fruit (assorted)
  • 750 g caster sugar per kg of fruit
  • 1.5 l brandy

Preparation

1. Fill your jar with ½ litre of brandy and arrange the seasonal fruit of your choice as you go along at the bottom of the jar.
2. Each time you add fruit, add 75% of the weight of the fruit in powdered sugar (i.e. 75g of sugar for 100g of fruit). The fruit must still be well covered with brandy after each addition of fruit and sugar.
3. After each addition of fruit and sugar, store the jar in a cool, dark place.
Avoid stirring.
