- Shell then immerse the beans in boiling water for 10 minutes.
- Firm them up by soaking them for 5 minutes in cold water.
- Fill the Le Parfait Super jars only ¾ full because the beans will swell, then add a boiling brine, salted at 10 g/liter to within 2 cm of the rim.
- Close and immediately proceed to the heat treatment for 2h30 at 100°C for a 1 liter jar, and 2h10 at 100°C for a 1/2 liter jar.
