- Hull the beans and wash them.
- Blanch the green beans for 5 minutes in a large pot of boiling water then refresh them in a bowl of cold water. Once cooled, drain them.
- finely slice the garlic. Peel the red tomatoes (immerse them in boiling water for 1 minute to make the task easier).
- Heat the oil in a large casserole dish and brown the garlic. Add the tomatoes then the beans. Add 3 glasses of water then cover and cook over medium heat: it takes 10 minutes to properly cook the beans and tomatoes.
- Arrange the beans and tomato pieces in the jars. Salt the juice remaining in the casserole at a rate of 10 g/l and pour over the beans up to 2 cm from the edge.
- Close the jars, ensuring that the edges of these homemade preserves are perfectly clean, then immediately proceed to theheat treatment the green beans for 1 hour at 100°C.

Oui le traitement thermique correspond à la stérilisation dans un autocuiseur ou stérilisateur. Ça peut paraitre long mais pour des légumes à peine cuit, c’est le minimum.
Bonjour quand vous parlez de traitement thermique s’agit-il d’une stérilisation avec un autocuiseur car je trouve le temps de stérilisation long
