Ingredients

Number of persons: 7-8 servings
  • 1 firm white cabbage
  • 300 g of smoked bacon
  • Onions
  • Butter
  • Salt pepper

Preparation

  • Remove damaged cabbage leaves from the vegetable. Remove the core.
  • Cut the cabbage into thin strips. Cooking white cabbage is simple, just blanch it for 1 to 2 minutes in lightly salted boiling water to make it lose some of its pungent taste.
  • Remove the cabbage with a slotted spoon and place it in the jars.
  • Cover with boiling salted water, at around 20 g/litre, up to 2 cm from the edge, close and immediately proceed to the heat treatment, 90 minutes at 100°C.

Tip: when serving, brown the onions in butter, add the bacon then mix everything with the cabbage and leave to simmer for half an hour. This recipe is ideal for example for large families, it can be prepared in large quantities and all that remains is to cook the cabbage.
