Recipe Canned apple and fig compote

This tasty seasonal compote recipe combines textures and flavours to our delight. An original idea for a change from the usual applesauce. Combined with a touch of lavender honey (if you please), this compote can take on a certain uniqueness of its own.

Ingredients

Number of persons: 4 small Le Parfait Super 125 Terrines
  • 4 Apples (Golden for example)
  • 4 Figs
  • 20 g honey (lavender, thousand flowers, acacia...)

Preparation

  • Peel the apples. Drain and cut into large cubes.
  • Cook the apples and lavender honey together, stirring regularly while reducing to a purée.
  • Meanwhile, wash and peel the figs and cut into small cubes. Add them to the apples just as they have finished cooking and stir briefly.
  • Immediately fill the Le Parfait Super 125 terrines to within 1 to 2 cm of the rim. Close and heat immediately for 40 minutes at 100°C.
