- Remove the zest of 2 of the most beautiful oranges. Cook the zest thus obtained for 15 minutes in water with small broths and cool them by plunging them into cold water. Drain and cut the zest into thin strips, set aside.
- Peel the oranges by removing the white parts, cut them into pieces, remove the seeds and membranes and weigh 1,2kg.
- Mix the flesh, orange zest, fresh sugar and ginger in your jam bowl and bring to a boil.
- From this moment, count the cooking time: 7 minutes with a jam sugar, otherwise 20 to 30 minutes. Maintain boiling and stir often.
- Check the cooking by pouring a few drops on a cold plate then tip the plate. The orange jam must sink gently.
- Enhance this aphrodisiac mixture and proceed without waiting for the jars. Close then put the pots upside down for 1 minute, then put them back to the place to let them cool.
