Sweet, fragrant and delicately exotic, lychees in syrup are a bit like vacation in a jar. When the season is over, they are there to save a too-so-so dessert or transform a simple yogurt into a tropical getaway. Easy to prepare, they require little effort and bring a lot of comfort!
- Bring the water with the sugar, ginger and vanilla to a boil.
- Bring to a boil, then remove from heat.
- Fill the jar with the lychees.
- Pour the syrup boiling up to 2 cm from the edge. You can add a teaspoon of rose water.
- Close the jar and proceed to the heat treatment for 45 minutes at 100°C.
To be enjoyed as is with a teaspoon - standing in front of the fridge, it is allowed -, to slip into a fruit salad, on a panna cotta, a rice pudding or even in an improvised cocktail when guests arrive without warning. And of course, the syrup doesn't go to waste: it loves to drizzle over a cake, flavor sparkling water or subtly sweeten an iced tea.
