- Peel the garlic, cut it in half and degerm it and blanch it 3 times.
- Grind the meat, herbs, garlic and onion alternately to obtain a homogeneous mixture. Then combine in a bowl: the meat thus chopped as well as all the other ingredients. Using your little hands (gloved of course!), mix everything carefully. Lightly roasting the dried fruits will make it even better...
- Leave to rest for a moment then pack the preparation well into the bottom of the jars up to 2 cm from the edge.
- Cut a small piece of strainer a size larger than the diameter of your jar and place it on the country terrine and "tuck" it between the jar and the meat using the back of a spoon.
- Close the jars of country terrine and place them in the electric sterilizer, they must be immersed. Immediately proceed to the heat treatment for 3h30 at 100°C.
You can serve this homemade country terrine accompanied by a small salad and parmesan shavings which you will take care to serve with a slice of country bread and pickles.

Bonjour, après stérilisation, les pots sont laissés jusqu’à refroidissement dans l’eau ou il faut les sortir chaud et les faire refroidir au frigo ?
