- Remove the first leaves from the cabbage and peel the carrots.
- Mince the cabbage and onions and grate the carrots and celery.
- Detail the cebettes into small sections.
- Mix everything in a large tank with 1 % of its salt weight.
- Knead and mix the vegetables by pressing them to get the juice out with the hands.
- Let stand 15-30 min.
- Repetit until you have wet hands.
- Fill the jar while tapping strongly, to remove the air pockets.
- Jar Le Parfait Great.
- Leave to ferment 1 week at room temperature, then ideally store at the temperature of a cellar. To consume from 2 weeks.
