The homemade poppy syrup is a recipe as pretty as it is surprising, perfect for transforming a wild flower into a real artisanal treat. Made from poppy petals (Papaver rhoeas), this natural syrup seduces with its beautiful pink color, its delicately floral scent and its calming properties. Long used in traditional recipes, it is now back in the spotlight to flavor drinks, herbal teas and homemade desserts.
- Remove only the petals from the poppies. Rinse quickly with cold water and drain gently.
- Bring the water to a boil and pour over the petals.
- Cover and let it infuse 12 to 24 hours, the water will turn dark red.
- Squeeze the petals then filter the mixture.
- Prepare the syrup: pour the previous mixture into a saucepan, add the sugar and lemon: the mixture will change color and lighten!
- Heat gently until the sugar dissolves, leave to simmer for 5 to 10 minutes.
- Pour hot into your swing-top bottles, close immediately.
- Store 1 in a cool place away from light and then in the refrigerator after opening.
