Recipe Wild berry jam

This morning, we're off to the woods to pick the blackberries, blackcurrants and blueberries we need to make this delicious homemade jam made with seasonal fruit. What's more, it's an economical recipe that's perfect for cutting your food budget.

Ingredients

  • 500 g blackberries
  • 500 g destemmed blackcurrants
  • 500 g blueberries
  • 1.2 kg granulated sugar or 1.5 kg granulated sugar

Preparation

  • Place the blackberries and blackcurrants in a stewpot. Bring to the boil over high heat. Stir with a wooden spoon, crushing the fruit. Leave to boil for 5 mins: the fruit will burst and release its juice.
  • Pour the blackcurrant and blackberry juice into a sieve over a container and allow to run off without pressing.
  • Weigh the juice and add its weight in sugar. Pour into a jam pan with the blueberries and 500g of sugar.
  • Bring the blackberry, blackcurrant and blueberry jam to the boil. From this point, count the cooking time: 7 minutes with a sugar jelly, otherwise 15 to 20 minutes.
  • Keep the heat high and stir often. Do the jam test: check that the jam is cooked by pouring a few drops onto a cold plate and then tilting the plate. The jam should run gently.
  • Skim this homemade jam, then immediately put it into jars. Close the jars and turn them upside down for 1 minute, then put them back to cool.
