Preparation

  • Prepare the spinach by washing the leaves and removing the large stems.
  • Boil the fresh spinach leaves for 6 minutes in a large pot of salted water.
  • Drain and squeeze out without excess before filling the Le Perfect Super jars (maximum 650 to 700 g of spinach/1 liter jar).
  • Cover with boiling salted brine at 15 g/litre, taking care to avoid air pockets.
  • Cook the jars in a bain-marie, with the lids open, for 5 to 10 minutes to expel any air bubbles.
  • If necessary, top up the filling level of this canned recipe with boiling brine to within 2 cm of the rim, close and immediately proceed to heat treatment the vegetables for 2.5 hours at 100°C for a 1 liter jar, and 2h10 at 100°C for a 1/2 liter jar.
