- Boil the shrimps in lightly salted water until cooked. Carefully remove and discard the shells.
- Put the shrimps into the Terrine or Familia Wiss jars, then cover with lightly salted water up to 2 cm from the brim.
- Seal tightly and proceed immediately to the heat treatment, 75 min at 100°C.
- Before serving, drain the shrimps and sauté them with olive oil and garlic.
