- Cut the rabbit and pig meat into small pieces.
- Pass everything through a medium-sized mincer, including the shallots.
- Then add the spices, whiskey and whole eggs, mix well.
- Fill the Le Parfait terrines with this preparation to within 2 cm of the edge and immediately heat treat for 3 hours at 100°C. Store for at least 3 months before consuming.
