- Prepare your syrup by mixing the sugar and water in the correct ratio of 500g sugar to 1 litre water and bring to the boil.
- In the meantime, rub the quinces with a cloth to remove the fuzz, cut them into quarters and remove the insides.
- Immediately plunge them into the lemon water to prevent browning.
- To obtain white quinces, blanch for 1 minute in boiling water. To obtain red fruit, cook them slowly in a little lightly sugared water until they turn red.
- Place the quinces in the Le Parfait Super jars, pour in the syrup up to 2 cm from the rim so that the fruit is completely covered, close and proceed immediately to the heat treatment, 35 minutes at 100°C.
