Recipe Quinces in syrup

Don't leave your quinces in a corner - think about putting them in a jar instead! Paired with a good syrup, they'll be a delight whenever and however you like.

Ingredients

Number of persons: 6 servings
  • Ripe quinces
  • Sugar
  • Water
  • Juice of one lemon

Preparation

  • Prepare your syrup by mixing the sugar and water in the correct ratio of 500g sugar to 1 litre water and bring to the boil.
  • In the meantime, rub the quinces with a cloth to remove the fuzz, cut them into quarters and remove the insides.
  • Immediately plunge them into the lemon water to prevent browning.
  • To obtain white quinces, blanch for 1 minute in boiling water. To obtain red fruit, cook them slowly in a little lightly sugared water until they turn red.
  • Place the quinces in the Le Parfait Super jars, pour in the syrup up to 2 cm from the rim so that the fruit is completely covered, close and proceed immediately to the heat treatment, 35 minutes at 100°C.
