- Wash the plums, then carefully remove the stems. Cut a small crosswise slit in the end of each plum. Plunge them one by one into a pan of boiling water and leave for 30 seconds, then peel them more easily.
- In a saucepan, combine the honey, caster sugar and water. Add the lemon zest and cinnamon powder and bring gently to the boil.
- Pack the jars with plums. Cover with boiling syrup to within 2 cm of the rim so that it completely covers the fruit.
- Close and heat immediately for 30 minutes at 100°C.
- Leave the jars of plums to cool before removing.
