- For this dietary recipe, choose fresh, white, tight cauliflowers.
- Divide them into fairly large bouquets and cut off any tails that are too long and any green parts.
- Bathe the bouquets in cold, salted and vinegared water for 1 hour. Remove them.
- Start cooking the cauliflower by plunging it into boiling water for 2 to 3 minutes before plunging it again into cold water for 10 minutes.
- Place the cauliflower in the Le Parfait Super jars and cover them with boiling brine, salted at 15 g/liter with a teaspoon of vinegar (or lemon)/liter, up to 2 cm from the rim.
- Close and immediately proceed to heat treatment the vegetables for 45 min at 100°C.
