Recipe Green Pea Soup

OH, PEAS. WE LOVE THEM SO, BUT THEY'RE ONLY IN SEASON FOR A SHORT TIME. TO SAVOUR THEIR SLIGHTLY SWEET FLAVOUR ALL YEAR ROUND, GRAB YOUR JARS AND LIDS! THIS SOUP IS A REAL TREAT THAT YOU CAN CHOOSE TO ENJOY HOT OR COLD, ACCORDING TO THE WEATHER. PACKED WITH MORE ENERGY THAN OTHER GREEN VEGETABLES, LET IT BE KNOWN THAT PEAS ARE A GOOD SOURCE OF VITAMIN C.

Ingredients

Number of persons: Several
  • 1 lettuce
  • 2 potatoes
  • 1 onion
  • 50 g butter
  • 1 stock cube
  • 300 g shelled peas
  • Salt and pepper

Preparation

  1. Separate and wash the lettuce leaves. Peel and finely dice the potatoes. Peel and mince the onion.
  2. In a casserole dish, sweat the onion in the butter, then add the lettuce leaves, diced potatoes, stock cube and peas, and cover with 1.5L water.
  3. Simmer for around ten minutes.
  4. Blend the soup to achieve a smooth consistency using an immersion blender and let it simmer for 5 more minutes. Add salt and pepper to taste.
  5. Immediately fill, seal, and heat-treat the jars for 1 hour at 100°C.

When it is time to serve, reheat, and add 300 ml of crème fraîche. Serve immediately.
