- Separate and wash the lettuce leaves. Peel and finely dice the potatoes. Peel and mince the onion.
- In a casserole dish, sweat the onion in the butter, then add the lettuce leaves, diced potatoes, stock cube and peas, and cover with 1.5L water.
- Simmer for around ten minutes.
- Blend the soup to achieve a smooth consistency using an immersion blender and let it simmer for 5 more minutes. Add salt and pepper to taste.
- Immediately fill, seal, and heat-treat the jars for 1 hour at 100°C.
When it is time to serve, reheat, and add 300 ml of crème fraîche. Serve immediately.
