Recipe Fig and peach chutney

Whether you use it as a jam or with meat, fig chutney is always delicious. This one, with vine peaches, is surely the best of all! So get ready to make the chutney of a lifetime!

Ingredients

  • 1 kg peeled figs
  • 500 g peeled peaches
  • 3 pink onions
  • 50 ml balsamic vinegar
  • 1 glass apple juice
  • 480 g sugar
  • 1 tbsp olive oil
  • 1 tsp ginger
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 2 pinches salt
  • Pepper

Preparation

  • Start preparing the chutney by cutting up the onions and frying them gently in a little olive oil, until translucent rather than brown. Once slightly cooked, deglaze with the apple juice and allow to evaporate.
  • Remove the stalks and cut the fresh figs into 4. Wash, pit and cut the vine peaches into 4. Add them to the onions, along with the vinegar, sugar and spices, and season with salt and pepper.
  • Leave to cook for around 1 hour, stirring regularly until it reaches a jam-like consistency.
  • Immediately fill the Le Parfait Super jars with the peach chutney, up to 2cm from the rim, close and heat for 45 minutes at 100°C.
