- In a frying pan, sweat the finely chopped onions in a little olive oil, then add the pork, cut into 3 or 4 cm cubes, and fry for 5 minutes.
- Sprinkle with flour and stir, then cover with water and add the curry powder, garlic cloves, bouquet garni, tomato, apple, harissa and raisins. Season with salt and pepper, stir and simmer for 50 minutes.
- Fill the jars with the pork pieces and add the sauce (remove the bouquet garni) up to 2 cm from the rim.
- Close and heat immediately for 2 hours at 100°C.
