- Prepare the roast at your convenience (as if consuming a roast of the same size). Salt, pepper and add the thyme and bay leaf.
- Place it in a Le Parfait Super or Le Parfait Familia Wiss terrine adapted to its size so that there is as little air as possible, up to 2 cm from the rim. Do not add any liquid.
- Close and immediately heat treat for 3 hours at 100°C.
N.B.: Perfect companion for picnics.
