Ingredients

Number of persons: Several
  • 1 kg of onions
  • 100 g of sugar
  • 20 cl of dry white wine
  • 10 cl of white wine vinegar
  • 100g butter
  • Salt and pepper

Preparation

  • Finely slice the onions then sweat them in the butter, without letting them brown.
  • Salt, pepper, add the sugar, sprinkling and mixing, then simmer for 10 minutes.
  • Add the aromatic base: wine and vinegar. Leave to cook gently for another ten minutes. Check the consistency of this onion jam: it should not be liquid.
  • Then fill the Le Parfait Super 125 terrines and immediately heat treat your canned onion compote for 40 minutes at 100°C.


Tips: you can enjoy this onion jam as an accompaniment to grilled meat, a roast or of course foie gras.
