  • 1,3 kg de mûres
  • 1 kg de sucre gélifiant (1,3 kg de sucre semoule ou de sucre cristallisé)
  • 1 citron
  • 10 feuilles de menthe

Preparation

  1. Rinse the blackberries under cold water.
  2. Press the lemon to extract the juice.
  3. Pour the blackberries, lemon juice, mint leaves and sugar into the jam bowl, mix and let macerate for a few hours.
  4. Bring to a boil. From this moment, count the cooking time: 7 minutes with a giant sugar, otherwise 15 to 20 minutes.
  5. Maintain a high fire and stir often. Two minutes before the end, crush the blackberries a little using a skimmer.
  6. Check the cooking by pouring a few drops on a cold plate then tip the plate. The jam must flow slowly.
  7. Split then proceed without waiting for the pots, close them and turn them back for 1 min, then put them back to the place to let them cool.
