Recipe Kiwis jam

Ingredients

  • Kiwis
  • Sucre cristallisé
  • 1 citron
  • 1 orange
  • 1 sachet de 2 g d'agar agar (pour 1 kg de fruits)
  • 1 sachet de sucre vanillé

Preparation

  1. Peel the kiwis (it's the longest!).
  2. Cut them into small dice, put them in a jam basin by adding the lemon juice, the orange juice, 1 sachet of vanilla sugar, half the weight of the kiwis in crystallized sugar and orange and lemon zest.
  3. Bake. As soon as it boils, lower the heat and cook for another 20 min. Depending on your taste, you can mix the preparation.
  4. Add the agar agar sachet and cook for another 5 min.
  5. Check the cooking by pouring a few drops on a cold plate then tip the plate. The jam must flow slowly.
  6. Ecumem and proceed without waiting for the pots. Close and turn the pots for 1 min, then put them back to the location to let them cool.
