- In a jar, mix the honey with water.
- Cover the jar with a clean linen or a gauze, fixed with an elastic.
- Leave to ferment at room temperature, stirring 1 to 2 times a day to homogenize the mixture well.
- After 5 to 7 days, thin bubbles should appear: you can then close the jar.
- Leave to ferment another 4 weeks at room temperature.
- Transfer the preparation to a lemonadier swing top Le Parfait, then continue the fermentation for 3 months, always at room temperature.
- For a less sparkling drink, open it from time to time to let the gas escape.
Be careful when opening, the pressure can be strong!
