Ingredients

Number of persons: 6
  • 1 kg wild boar liver
  • 2 kg lean pork belly
  • 18 g salt/kg
  • 3 g pepper/kg
  • 3 eggs
  • 6 cl Cognac or Armagnac
  • 1 pinch of nutmeg (optional)

Preparation

  • Finely chop the meat and wild boar liver.
  • Add salt, pepper, eggs, Cognac or Armagnac, pinch of nutmeg.
  • Mix everything well. Fill Le Parfait Super or Le Parfait Familia Wiss terrines with this pâté recipe to within 2 cm of the rim. Close and immediately heat treat for 3 hours at 100°C.

Je viens d’en préparé rien de plus facile la j’ai mis à cuire dans des petits bocaux pour en manger à l’apéro miam je commence a saliver 😁
